Vegan Sausage Roll


Yes, I apologise for the over used baking tray picture (lose points for presentation!)

The great thing about this particular recipe, is that you can improvise and use whatever ingredients you have in the kitchen, they're great party food! All you need to do is cut them into smaller pieces before baking to make them finger food.

1 large onion
a few cloves of garlic
cup of spinach
half a cup of pumpkin
half a cup of sweet potato
half a cup of broccoli
1 carrot
half a cup of corn
half a cup of peas
5 tablespoons of orgran no egg (or alternatively flour)
borg's puff pastry (or vegan puff pastry of choice)
2 slices of lightly toasted bread (I used soy and linseed bread) processed into breadcrumbs. (more if mixture needs to be thicker)

throw everything but the corn and peas, puff pastry, bread and no egg in a food processor or alternatively chop EXTREMELY finely/grate.
fry mixture up until soft and add breadcrumbs and no egg

roll into puff pastry (pastry should double over)
cut into 3 cm slices and place a slit through this
paint with soy milk and sprinkle with sesame seeds

place in oven on 180 for up to 45 minutes (depending on oven) until golden brown
