Burritos



So this is one of my all time favourite meals, it is so simple and tasty! (plus I love refried beans and mexican food) if you want something tasty, easy and filling, this is an awesome recipe!

with the obvious ingredient in this one being tortillas, this is my recipe for the mince

I used:
1/2 cup of pumpkin
1/2 cup of brocolli
1/2 cup of sweet potato
1/2 cup of carrot
1/2 cup mushroom
1 tin of refried beans
1 tin of corn
1 large onion
garlic to taste
6 heaped tablespoons of no egg (or cornflour)

Preheat oven to 180 C
process all vegetables except the corn until finely chopped (I don't do this with the onion because I prefer it to me a bit more chunky, so I roughly dice this)

Fry onion and garlic in a pan with some oil until fragrant, throw in processed vegetables and mix until all vegetables are soft and cooked through, add refried beans once this has been done, and then mix in the corn and add the no egg - this will hold the mixture together a little better.

Roll mixture up into tortillas and place on a greased baking sheet, throw in oven until slightly browned



top with extras - you can use avocado and salsa which is always good, or even top it with some vegan sour cream. If you're feeling lazy - BBQ or tomato sauce goes just as well :)
